Chickpea Ratatouille
Grate lemon zest and set aside

Chop garlic and basil stalks. Scrape down sides of bowl

Chop onion, add oil and cook for 5 minutes

Meanwhile cook veggies in fry pan

Add tomatoes, can chopped tomatoes & balsamic vinegar. Cook a further 14 mins

Add simmering basket + green beans, cook 6-8 minutes

Cooked veggies, beans, chickpeas, olives, spinach and olives into serving bowl

Add tomato sauce mix, top with basil and enjoy!
