Chipotle’s Copycat Guac
Ingredients: 2 ripe avocados, 1/4 cup chopped red onion, 1/2 seeded jalapeño, 1/2 lime, 2 T cilantro & kosher salt

First, cut your jalapeño in half and take out the ribs & seeds

Then take a 3/4 inch slice from a red onion, and chop them up a little

Finely chop the onion & jalapeño (a Pampered Chef Food Chopper makes this job SO easy!)

Look how tiny! This is perfect!!

Cut the avocados in half. Twist both halves to open, then using a swift motion of the knife, chop into the seed, and twist to remove.

Cut the avocado, then remove the flesh with a spoon. Add to a bowl with the onion & jalapeño.

Add the chopped cilantro, salt & lime juice. Using a fork, mash the mixture together.
