Chocolate Babka Bread Recipe
Gather the ingredients for the bread dough

You need a stand mixer with a paddle attachment

You will need 2 loaf pans and parchment paper

Make the egg wash with 1 large egg yolk and half and half (store in the fridge until needed)

Gather the ingredients for the chocolate filling: Chocolate, butter and sugar

Activate the yeast: Add warm milk yeast and 2 teaspoons sugar to the standmixing bowl

Combined the ingredients to help the yeast activate. It should take about five minutes for the yeast to activate.

The yeast mixture should look like this when it is ready. If it does not, then start over with fresh yeast or give it more time.

To make the dough: Add 1/2 cup flour to the yeast mixture and beat on medium until combined

Tip: Scrap down the sides if you need to.

Add the eggs (& egg yolk), vanilla, salt, and remaining half cup sugar

Beat the mixture on medium speed until mixed and then reduce to low

Add the remaining flour (2 3/4 cups), 1/2 cup at a time.

Increase speed from low to medium and add the 10 tablespoons butter 2-3 tablespoons at a time. Scrape down the bowl and paddle, if needed.

When the butter is fully incorporated, the dough should look like this, shiny and it should form strands from the bowl to the paddle, soft & sticky.

Scrape the dough into an oiled, large mixing bowl, cover with wrap and allow to rise double in size (1 1/2-2 hours)

Tip: You can use the “proof” setting on your stove if you have it to get a consistent bread dough rise.

Prepare your loaf pans while the dough rises

The dough should look like this when it is done rising.

Using an oiled baking spatula, punch down the dough.

Tip: Keep some extra flour handy for rolling the dough out

Turn the dough out on to a floured surface (like a pastry mat) and divide in half with a dough scraper

Roll the dough out into an 10”x18”-inch rectangle (with long side facing you)

Tip: use a ruler to measure the dough

Spread the melted butter on the dough, make sure to leave a 1/2 inch border all around

Spread 1/2 the chocolate chips and 1/2 the sugar (about 2 tablespoons) evenly, use egg wash on the long far side, and roll the dough up, pinch ends

Bake in a preheated 350 degrees Fahrenheit oven for 40 minutes until top is golden & the bottom should sound hollow when tapped.

You can experiment with different shapes; this is in a 9 inch cake pan with the same baking time.
