Chocolate Cremeux Recipe
Ingredients: 120ml Heavy Cream, 240ml Milk, 75gr Sugar, 3 Egg Yolks, 180gr Semisweet Choc. (chopped)

Bring the cream, milk and the half of the sugar to a boil.

Whisk the egg yolks and add the remaining sugar.

Temper the yolk mixture with 1/4 of the hot cream. Add the warm yolk mixture to the saucepan.

Cook over medium heat, stirring constantly, until the custard reaches 180-190F.

Remove from the heat.

Pour it over the chocolate.

Blend until well combined.

Strain the mixture through a strainer into a pitcher or measuring cup.

Pour the mixture into serving cups.
