need: 3 yolks, 8floz milk, 4floz heavy cream, 180g chocolate, 75g sugar, and 1 gelatin sheet soft

Add your cream, milk, and 1/2 of the sugar. Bring to boil

In a separate bowl, combine yolks and rest of sugar

Once boiling take off heat.

TEMPER: Slowly drizzle your hot mixture to your eggs and mix fast!!!

Once all incorporated add back to pan and bring to 180F

Add in gelatin and stir!!! Then take off heat one at 180F

Add in your chocolate!!:)

Blend just till combined

Cover and transfer to fridge! Wait for it to cool and set⌚️(2-3 hours)

Take out of fridge and Finish! I decided to fill some of my puffs!
