Chocolate Mint Mousse Pie
For the cookie crust, mix crumbs with melted butter until it looks like wet sand

Press firmly onto bottom and sides of tart pan using your hands or a measuring cup

For the filling, mix sugar, cornstarch and milk and bring to a boil, stirring frequently

Boil for a minute, stirring constantly, until it thickens

Immediately add the chopped chocolate, mint extract and mix until dissolved. Transfer to a bowl, cover and refrigerate

Beat the cold chocolate mixture until it starts to integrate

Add the cold cream and beat until thick and smooth

It will grow in volume and become lusciously smooth

Fill the cookie crust with the chocolate mousse, spreading evenly, and refrigerate
