Chocolate Oatmeal Raisin Cookies (no flour or eggs!)
To a medium bowl, add one cup of gluten free oats.

To that, add 1 cup of oat flour. I make this by putting oats in a food processor and pulsing them u til they’re fine and powdery.

Add 1 tablespoon of baking powder.

And 1 tablespoon of baking soda.

Add 1 tablespoon of cinnamon.

Add 1/4 teaspoon of salt.

Whisk those dry ingredients together and set aside.

In a large bowl, add 1/4 cup of coconut oil (melted).

To that, add 1/4 cup of coconut sugar.

Now, add 1/4 cup of maple syrup. The real kind, please.

Now, we’re making flax eggs. 2 tablespoons of flax meal mixed with 6 tablespoons of water. Let set for 15 minutes.

Add 1 tablespoon vanilla extract.

Now that the flax eggs are ready, add them to your wet ingredients.

Now, add your dry ingredients to your wet ingredients. And guess what we’ll be doing again? That’s right - mixing!

Now for you add-ins. I did this by eye, but sprinkled in some oats, raisins, and...

Shredded coconut. Then you know what I did? I mixed. Correct.

Spoon out into cookie sheet with parchment paper or one of these things.

Flatten out and mold with hands. They won’t grow anymore so make them look like cookies.

Add chocolate chips to whichever cookies you’d like.

Into the oven. 340F (convection) for 10-15.

Take them out and allow to cool fully. I’m using an oven grill rack as my cooking rack because I don’t have one.
