Chocolate Oreo Ice Cream
Chop dark chocolate into small pieces.

Add cream and milk to a saucepan heated over medium heat.

Add the chocolate to the pan and stir continuously until melted.

Add cocoa powder and whisk to combine. Add a pinch of salt and vanilla bean paste.

Separate 6 eggs.

Add the sugar and whisk until the mixture has become pale yellow and shiny.

Whisk in 1 cup of the hot cream and chocolate mixture to the eggs to temper.

Place the egg mixture back in with the remaining cream and cook until slightly thickened.

Strain the liquid through a fine mesh strainer to remove any lumps.

Place a layer of Saran Wrap on top of the mixture and refrigerate overnight.

Place the cold ice cream base into a frozen ice cream machine.

Turn the machine on and run for 15 minutes or until ice cream is set.

Place Oreos in a ziploc bag and remove air. Smash with a rolling pin or pan.

The ice cream should be creamy and slightly frozen.

Mix in the Oreo pieces and serve or freeze in an air tight container.
