Pulse until ground, except for a few peppercorns.

Stir in the orange zest.

Cut slits all over the skin and around the rest of the pork.

Using a small spoon or your finger do your best to fill the holes with some of the marinade.

Rub remaining marinade all over the pork.

Don’t forget the bottom and sides.

Cover and recrigerate 1-3 days.

Transfer the meat to a roasting pan and rack.

Add orange juice to the pan. Transfer to a preheated 450 degree oven.

After 90 minutes, reduce temp to 375 degrees. Add water to the pan as needed. The meat is ready when a meat thermometer registers 145 degrees.
