Christmas Plum Cake
Take 1/2 cup sugar and 1 tbsp water in a pan.

Heat it on a low flame.

It will slowly start to turn into a deep dark caramel color. This process takes about 6-8 minutes.

Take it off from the heat and add 1/4 cup of warm water. Turn the heat back on and heat it on low flame.

Once the sugar dissolves completely, keep it aside and let it cook completely.

Sieve flour, salt, cinnamon powder, nutmeg powder and keep it aside.

Drain the soaked dry fruits completely and add 2tbsp flour. Mix well to coat the fruits and keep it aside.

In a mixing bowl, add butter and sugar.

Beat them together until smooth and creamy.

Add vanilla essence and one egg a time.

Combine well until smooth.

Now add half of the flour mixture.

Add half of the Carmel.

Fold gently.

Add in the remaining flour and caramel mixture. Fold again.

Add in the dry fruit mix and fold gently.

Pour the cake batter into a cake pan. Top it off with some dry fruits and nuts.

Bake at 350F for 50-55 minutes until the top turns dark brown and when a skewer inserted comes out clean.
