Add olive oil and the zest & juice of one lime to a small bowl

Add salt, chili, cumin, garlic powder, coriander, and fresh cilantro. Stir to mix.

Pour marinade over chicken thighs. Marinate at least 30 minutes.

Grill 5-8 minutes on each side, or until the internal temperature reaches 165F.

Slice chicken into bite sized pieces.
