Cilantro Lime Cauliflower Rice- Hey Keto Mama
Cut florets from one fresh medium sized cauliflower. This should yield about 3 cups.
Add fresh cauliflower florets to a food processor and pulse 10-15 times until riced. Set aside.
In a skillet over medium heat add 1 tbsp olive oil and melt 2 tbsp butter. Add 1/4 cup diced onion.
Sauté onion for 1-2 minutes then add 1 tsp minced garlic and continue sautéing for 30 seconds.
Pour riced cauliflower into skillet and add salt & pepper to taste. Cook on medium, stirring often.
Stir in 1/4 cup fresh lime juice and 1 tbsp lime zest. Stir in 1/4 cup chopped cilantro.
Continue stirring 5-7 minutes until tender. Remove from heat.
Serve with additional fresh squeezed lime. Enjoy!
