Cinnamon Brown Sugar Grilled Pineapple
Peel the pineapple by cutting off the top and bottom. Run the knife between the flesh of the pineapple and the skin.

Cut 1/2 inch thick slices.

Using a melon baller or small cookie cutter cut out the core.

Place the pineapple into a baking dish and sprinkle with 2 tablespoons cinnamon and 1/2 cup brown sugar. Coat on both sides.

Let sit while you preheat the grill or a grill pan over medium high heat.

Grill on one side for 3 minutes.

Flip the pineapple with the bottom has become caramelized.

Grill for another 3 minutes. Then place them back into the pan with the brown sugar and cinnamon.

Serve plain or with vanilla ice cream.
