Combine chopped pecans, brown sugar, and cinnamon in a bowl. Add melted butter, cinnamon, and salt. Combine well. Roll out your pie dough to 1/8” thickness. Cut out 12 rounds using a cookie cutter or cup. Place 6 dough circles on a baking sheet. Beat egg to create egg wash and brush onto the dough. Place one tablespoon of filling in the center of each pie. Place another piece of dough on top and crimp the edges using a fork. Optional: cut out shapes from leftover dough & place on top of the pie. Brush the pie with egg wash and sprinkle with cinnamon sugar. Bake pies at 375 degrees for 15-18 minutes or until golden brown. Enjoy warm with vanilla bean ice cream or a hot cup of coffee.
