Cinnamon Streusel Coffee Cake
Preheat oven to 350 F. Mix 1 cup white sugar + 1 cup all-purpose flour +1/2 cup finely chopped pecans+ 1 tbsp cinnamon

Add 6 tbsp butter. Mix by hand until crumbly consistency. Set aside.

For Cake: Mix 2 cups all-purpose flour + 1/2 tsp baking powder + 1/2 tsp salt + 1 tsp baking soda. Mix together & set aside.

Put 1 cup sugar to the bowl of a stand mixer. Add 1 stick butter.

Cream sugar & butter together on medium until fluffy. Scrape the side of the bowl.

Add the eggs one at a time & mix after each egg.

Scrape the sides & bottom of the bowl.

Add 1 tsp vanilla + 1 tbsp lemon juice.

Add 1/3 of the flour mixture alternating with

1/3 of the sour cream. (Total sour cream 1 cup) Beat for 1 minute after each addition.

Scrape down the sides & bottom of the bowl after each addition.

Put 1/2 of the batter mixture in a 9x9-inch baking pan lined with a parchment paper

Add 1/2 of the streussel mixture.

Add the rest of the batter.

Top w/ the rest of the streusel. Bake for 35-45 minutes until a toothpick inserted into the center comes out clean.
