Citrus Marinated Olives With Feta
Lightly smash garlic to peel

Lightly smash olives to remove pits (optional- you can leave them as is or use pitted ones)

The easiest ones to remove pit from and my fav are Castelvetrano but you can use any and a variety of a few

Place garlic, citrus peel, chili’s or chili flakes, olives and olive oil in small pan and simmer over med/low heat 5-7 min

Garlic should be softened and edges of them starting to get golden

Place crumbled feta in shallow serving dish

Spoon olives and oil over and let stand 10 min -1 hour then serve with crusty bread.

Once cool they can be stored in a sealed container or jar in the refrigerator for up to 1 month.

The longer they sit the more infused the flavours get - making them a great make ahead appetizer
