Classic Oatmeal Cookies(choc chip/or raisin)
Whisk together flour, baking soda, salt and cinnamon

Place softened butter and sugars in a large bowl

Using a standing mixer or hand mixer, mix until light and fluffy

Add the egg and egg yolk one at a time and then the vanilla extract

Mix in the flour mixture a little at a time just until incorporated.

Scrape the mixer attachment of dough and use a spatula to scrape down the side the bowl

Add the oats to bowl

And the chocolate chips or raisins.

Use a spatula or wooden spoon to mix them both into the batter

Use a cookie scoop to scoop up the dough then roll into a ball and place on a lined baking sheet

Bake for 12-14 minutes

Until edges are golden

(Optional) add a few chocolate chips (cc) on the still warm cookies for extra cc puddles

Let them cool on baking sheet for a couple of minutes then transfer to cooling rack

Sprinkle with some flaky sea salt (optional but recommended)
