Clementine Spinach Salad
Salad: 4 cups baby spinach, 1 cup clementines, 1 avocado, 1/3 cup pecans, 1/3 cup dried cranberries
Dressing: 4 Tbsp virgin olive oil, 2 Tbsp lemon juice, 1 Tbsp honey, 1/4 tsp fine sea salt
Toss salad and serve. Sprinkle with extra toppings, add another squeeze of lemon and dig in! 🥗
