Coconut Filling Ingredients

Stir the GF instant yeast and the warm water. Leave a few mins to become foamy

Whisk well the GF flour, sugar, BP, cinnamon & salt

Add the egg, oil and lemon zest to the yeast mix. Whisk well

Add the wet ingredients to the dry ones. Mix until all is incorporated

Dough should be sticky and wet, not dry. Cover and place in the FRIDGE for minimum 3 hours

The dough should look like this once it’s rested in the fridge. Don’t add GF flour at this stage!!

Place half the dough in a prepared baking pan. Dough should be very sticky

Add a generous amount of oil

Add a generous amount of shredded coconut

Cover with the remaining dough

Add more oil and loads of coconut on top. Finally bake on medium heat for 25-30 mins
