Coconut & Ginger Kofta (GF & DF)
Start by adding plant based meat, chopped onion, garlic and ginger paste to a mixing bowl.

Add your spices! I used coriander, turmeric and curry powder. Mix well

Heat skillet on medium heat. Form “meatballs” and brown on all sides.

Set cooked meatballs aside; in same pan add avocado oil, sliced onion & tomato paste. Mix well.

Add one can diced tomatoes & full jar of diy delish coconut & ginger sauce. Stir!

Add meatballs back to sauce. Cover and let simmer on low for 10 minutes.

Serve with rice, naan, quinoa or veggies! I promise you won’t even miss the meat!
