Coconut Curry Chicken With Veggie Rice
Put chicken into a bowl & add turmeric, curry powder & salt. Mix & set aside.

Into the bowl add turmeric, curry powder & oil & cook 5 minutes.

Add in coconut milk & reserved chicken & cook for 18 minutes.

Add in sliced snow peas & capsicum & cook for 3 minutes.

Once cooked, add lime juice & pop into a Thermoserver to keep hot whilst you cook the veggie rice.

Add broccoli, cauliflower, oil, salt & pepper & chop for 8 seconds until it resembles rice.

Cook for 8 minutes.

Add 1/2 lime juice & add into serving bowl.

Serve with lime wedges on the side.
