Heat oil & curry powder. Cook 1-2 min. Stir in red curry paste, garlic, & shallot. Cook 3-4 min.

Season chicken with salt and pepper.

Add to curry mixture and toss to coat. Cook until no longer pink in center, about 5-7 minutes.

Add tomato sauce, sugar, and coconut milk. Mix well.

Set heat to low. Cover and simmer, stirring occasionally, for 30-45 minutes.
