Coconut Pulp Granola Bars

Line the bottom and sides of a square cake pan with parchment paper.
Add 2c puffed millet/amaranth, 1c quick oats, 2T chia seeds, 2T ground flax, and 1/2t salt to a large bowl.
Stir to combine all the ingredients.
Add 1c coconut pulp, 1/3c nut butter, 1/3c date syrup, and 1t vanilla extract.
Stir until all the dry ingredients are evenly coated in wet ingredients.
Press into the parchment-lined pan. Freeze for at least an hour.
Cut into 9, 12, or 16 bars. Serve and enjoy! Store leftovers in the freezer.
