Coconut Shrimp With Apricot Chili Dipping Sauce
Peel & devein approximately 8 oz shrimp. Leave tails on if desired. Pat dry.

French fry cut 1 sweet potato using the Rapid Prep Mandoline. Place in bowl.

Drizzle potatoes with EVOO. Season with salt & pepper. Place on air fryer tray.

Roast for 20 mins.

Zest 1 lime, then halve.

Salt & pepper shrimp. Add 1/2c flour in 1st tray; 2 eggs & 1T milk in 2nd. In 3rd, add zest, 1/2c Panko, 3/4c sweetened coconut flakes & 2T butter.

Dip shrimp in flour, egg mixture & breading. Place on outer edge of air fryer trays.

Bake for 7-8 mins.

Rotate trays when air fryer signals halfway through cooking time.

Juice lime to yield 1 1/2T. Add to 1/2c apricot preserves. Mix in 1/4t red chili flakes. Microwave 45-60 seconds.
