Cold Peanut Noodle Salad & Grilled Chicken

Make peanut sauce: place garlic, ginger pB, in food processor

Along with the honey, Sriracha, lime juice, oil

And soy sauce and process

Until smooth - reserve 1-2 Tbsp for marinade

Toss chicken with reserved sauce to coat & marinate for 20-30 min - up to overnight if making ahead

Cook noodles according to package and then cool and drain completely and place into large bowl

Toss with a little oil to prevent from sticking

Grill chicken approx 6 minutes per side

Remove and allow to rest a few minutes then slice

Add all the veggies to the noodles

And toss well and then serve

Serve with sliced chicken, extra lime wedges, and sauce on the side
