Collard Green Wraps (Paleo, Whole30, AIP)

Cut stems off clean collards and shave flat

Prep filling by chopping veggies and protein

I’m using red cabbage, peppers, carrots, and grilled chicken (omit peppers for AIP)

Blanch collards in boiling water for approx 30 seconds - 1 minute

Quickly add to ice water to stop cooking. Repeat with all greens.

Pat dry greens with towels

Lay two greens in a cross

Add your filling and wrap like a burrito (fold two short sides in first)

Cut them in half and optionally dip in sauce!
