Collard Greens with Bacon
Remove thick stems

Roll & rough chop. Rinse really well in water.

Use kitchen shears to snip bacon into pieces. Let bacon heat up with pan to render off more fat.

Once bacon is crisp, add onions and garlic.

Add washed, chopped greens and stir to coat. Add splash of red wine vinegar & a drizzle of honey.

Season with salt and pepper. Add a pinch red chili flakes for a kick!

Cook low and slow until greens are silky soft. Half hour to several hours. Add water if pan gets dry

Fun fact! The golden liquid leftover is called Pot Likker and its pure flavor!
