Drizzle with avocado oil and season with salt. Toss to combine. Roast at 400 for 20 minutes.

Dice 1/4 of a red onion.

Dice the nectarines.

Toast sliced almonds.

To make the dressing zest and juice 2 lemons into a mason jar.

Add extra virgin olive oil and salt. Seal the mason jar and shake to combine.

Let the corn cool slightly.

Add 1 cup cooked quinoa into a serving bowl. Add corn, nectarines, onion and almonds.

Add blackberries and dressing and mix to combine. Add arugula and toss to coat greens.
