Corn and Red Pepper Quesadillas
Sauté corn, red peppers, onions and spices for 15 minutes.

Pour into a bowl.

Add juice from two lime wedges.

Lightly toast a flour tortilla.

Flip, and top with Pepper Jack cheese...

...and the corn and red pepper mix.

Top with another flour tortilla, then flip to cook the top.

Remove from heat.

Slice into triangles.

Serve with crema or sour cream and enjoy!
