Begin by adding yeast, sugar, and warm water to a standing mixer. Stir with a spatula.

The yeast is activated when you see a bubbly, frothy liquid. Stir again.

Add oil, honey, salt, and cold water to the mixture. Stir well.

Add dough hook to the mixer. Add oatmeal, cracked wheat, and whole wheat flour. Start the mixer.

Begin adding the regular all-purpose flour. Don’t add it all at once.

Let the mixer run and continue adding flour until you reach your desired consistency.

You’ll see the dough pull away from the mixer. Use your finger to test for stickiness.

Spread some oil in a clean bowl.

Place the dough in the bowl and use your hands to form it into a nice, smooth ball.

Cover with a clean dish towel.

Punch it down and let it rise again.

Form the dough into loaves.

Place dough into loaf pans. (This recipe makes three large loaves.)

Cover again to rise.

When dough has risen, bake at 350 degrees for 35-40 minutes.

Remove bread from over and set on cooling racks. Brush with butter.
