Cranberry Apple Stuffed Acorn Squash
Roast halved acorn squash until tender.

For the filling, simmer dried cranberries in apple juice with spices and brown sugar.

Stir in cornstarch slurry and simmer until thickened.

Add apples, pecans and butter.

Spoon filling into squash and finish baking for a few minutes.
