Cranberry Orange Almond Biscotti
Add the flour to a medium bowl

Then add the almond flour

Along with the baking powder and salt and whisk to combine

In a larger bowl add the eggs and all the sugars & mix until pale & thick, approx 3 min.

Mix in the butter and the vanilla or almond extract with the orange zest

Then gradually mix in the flour mixture

Until just incorporated then fold in the almonds and the cranberries

Scrape out onto a lightly floured surface - dough will be sticky

With floured hands roll/form into a ball and cut in half

Roll each out into a log and slightly flatten then repeat with the next half

Transfer to baking sheet - dont worry if you have to adjust shape again once in the pan - brush with egg wash (optional) - then bake

Allow to cool for a few minutes enough for you to be able to handle them

Then slice (do not worry if you get a few crumbles)

Place back in the pan cut side up and bake 10 more mins

Until extra golden. Allow them to cool completely then enjoy

They are easy to make and the perfect snack with a hot beverage
