Cranberry Pistachio Bread
Beat together butter and sugar until fluffy.

Add eggs and vanilla extract, mixing to combine.

Combine cranberries and a bit of sugar in a food processor. Pulse to roughly chop.

With mixer on low speed, add cranberries to butter and egg mixture just until combined.

In a separate bowl, whisk together flour, baking powder, salt, and pistachio pudding mix.

Add half of the flour mixture to the wet ingredients, followed by milk, then remaining flour mix.

Stir in chopped pistachios.

Transfer batter to prepared loaf pan and bake.
