Cream of Mushroom Soup
Super creamy, super flavorful, and super easy to make!

Use any of your favourite mushrooms and just tear the larger ones into smaller pieces (they get blended later so it doesn't need to look nice).
Save some for garnishing at the end, if you like!
In a soup pot, melt some butter and add the onions and garlic. Season with salt.
Add the mushrooms and saute until they gain some color.
In goes dried thyme and chili flakes (you can use black pepper instead).
Melt butter and add the flour and saute until the raw smell disappears (about 30-60 seconds).
Pour the stock in (I use stock powder or a soup cube mixed into water).
Bring it up to a boil and then let simmer for 15-20 minutes.
Add cream or cheese while it's still warm.
Optional: fry up some mushrooms to garnish.
Garnish with fried mushrooms or herbs and serve while warm!
