Creamy Asparagus Soup
Heat butter and olive oil in a soup pot

Add half the asparagus tips, cook just 1-2 min until they have softened a bit - these make the perfect garnish

Remove and set aside. Add a touch more olive oil to pot if needed

Add shallot and leeks to pot and cook until softened

Add the rest of the asparagus to pot, garlic and spinach and cook a few minutes

Add broth and then simmer until asparagus is tender

Ladle soup into blender or use an immersion stick blender to blend until creamy

Pour soup back into pot

Stir in the cream

Ladle out into bowls

Top with wild Mackerel (optional) asparagus tips and I like to garnish with micro greens
