Creamy Chicken & Wild Rice Soup
Cook bacon until rendered and pour off all but approx 1-2 tbsp of fat

Add the onions, carrots, celery, I added mushrooms too - not in the original recipe but had some to add

Garlic, thyme and salt and pepper to taste and cook 8-10 min until veggies are softened

Add the rice and allow to toast for a minute or so

Stir in the flour and allow to cook for another minute

Deglaze with white wine scraping the bottom of pot and then stir in the broth

Add the bay leaves bring to boil then reduce heat to a simmer - cook for 25-30 min until veggies are tender

Add chicken or turkey and simmer stirring occasionally another 10 minutes until rice is tender

Stir in the cream and test for seasoning and then serve

Add more or less broth according to how thick or thin you want your soup - and same goes for the cream add as little or as much as you prefer
