Creamy Chicken Enchiladas
Brown your chicken (ground or cubed)

Stir in taco seasoning and water, simmer until reduced and then set aside

Make filling - in a small bowl combine spinach

And cheese and toss well to combine - set aside

In a small bowl combine the remaining green chilies, cream

And Salt & pepper - set aside

Assemble enchiladas: place a little of the meat mixture and

the veggie/cheese one on your tortilla

Roll & place seam side down in baking pan/dish

Pour green chili and cream mixture over top

Sprinkle with remaining cheese and bake

Serve loaded with fresh cilantro, slices jalapeños and avocados.....and enjoy!
