Creamy Corn Casserole
Crisp bacon in a pan, then remove and drain, leaving 2 T grease. Caramelize onion, then add flour and cook 2 minutes.
Pour in milk while whisking, then add cheese slowly, stirring until fully melted.
Add corn, and 3/4 of both the cooked bacon and green onion, and stir to distribute.
Place filling in a two quart casserole, pushing down to ensure there's no air holes.
Crush crackers and mix with additional cheese to spread over the top.
Cover and bake at 350 for 45 minutes.
Remove the lid and add the reserved bacon and green onion. Bake 10 more minutes. Let set for ten minutes, then serve.
