Separate egg whites and yolks. Beat egg whites to a soft peak/meringue, fold in sugar & vanilla

Beat egg yolks, sugar & milk to a creamy texture. Add vanilla. Sieve flour, baking powder and salt.

Gently fold in the flour with the creamed egg yolks till you get a smooth consistency.

Divide mixture 2 ways into two greased & lined cake pans. Spread on to each pan and smooth it out.

Add the white meringue on top of the egg yolk base and sprinkle with crushed mixed nuts

Bake cakes at 350 F for 20-25 minutes on the middle rack in your oven. Remove and cool.

Make homemade jam to use between the two layers. Simmer chopped plums, sugar, πŸ‹juice and water.

Spread the jam on the cake. This layer serves as the base.

Add some whipped cream on top of the layer of jam. Add the 2nd cake on top of this.
