Creamy Instant Pot Potato Leek Soup
Slice the leeks and chop the potatoes into small uniform pieces.

In the Instant Pot, saute the leeks in the butter. Add the potatoes, salt, pepper, garlic broth, thyme, and bay leaf.

Secure the lid and cook for 6 minutes on high pressure. Do a manual pressure release.

Remove the thyme sprig and bay leaf. Blend until smooth.

Add cream, if desired. Serve with bacon and green onions.
