Bring a pot of salted water to a boil and add pasta. Cool until al dente. Drain, but reserve 1 cup pasta water.

Meanwhile, in a large skillet, cook 1/2 lb Italian sausage with a swirl of olive oil.

Add a small chopped onion and cook until sausage is browned and onion is translucent.

Stir in 1 cup half and half, scraping up browned bits.

Bring to a simmer and cook until reduced by half, about 3-4 minutes.

Add 1 1/2 cups chopped kale, pinch red pepper flakes, and juice of 1/2 a lemon.

Stir together until kale is wilted.

Add 1/2 cup shredded Parmesan cheese. Stir until melted.

Add the cooked pasta to the pan and stir together.

Add a few small splashes of reserved pasta water to thin sauce and coat pasta.

Sprinkle with black pepper to taste and serve.
