Creamy Mediterranean Chicken Skillet Pasta
In a large skillet, melt the butter. Season 1/2 lb cubed chicken and cook at medium high heat until browned and done

Once chicken is done, add half a fresh bell pepper

Once cooked, remove to a plate and keep warm.

Deglaze the same pan with a little stock

Add & cook one diced onion until softened

Add 2 Tbsp minced garlic and 8 oz roasted peppers. Season w/ salt & pepper. Cook for 2 minutes

Add 7 oz cream cheese and 2 cups of chicken stock

Whisk the sauce until blended, then simmer for around 7 minutes – allowing the sauce to reduce

Add the spinach and toss into the sauce until wilted

Add the chicken and any juices back into the pan and allow to warm through

In the meantime cook some pasta

Plate the pasta, add chicken and spoon a good helping of the sauce over the top
