Creamy Roasted Tomato & Sweet Potato Soup
Place sliced tomatoes & garlic on sheet pan & toss with S&P, spices and oil (use any tomatoes)

Meantime - heat oil in a pot and sauté onions until softened and translucent

Seasoning with salt and pepper as you go along

Add the chopped sweet potatoes and stir to coat

Remove the tomatoes once done

Carefully add them to the pot

Stir in the broth and simmer half covered until the potatoes are fork tender

Stir in the spinach if adding (optional)

Remove from heat

Use immersion blender to blend or blend in batches in a blender

Until creamy and smooth - I did mine in two batches

At this point you can swirl in some heavy cream for a richer soup - or leave as is

Stir in the chopped torn basil

Check for seasoning and serve

I love to serve mine with some chili flakes and lots of black pepper, flaky sea salt & crusty bread
