Creamy Smoked Salmon Pasta Salad
Bring pot of water to boil and cook pasta according to package directions

3 minutes before pasta is done add the asparagus

1 minute before it’s done add the peas

Remove from heat & immediately drain & rinse with ice cold cold water to stop the cooking process

Drain well & empty into large bowl. Toss with 1 tbsp of olive oil to prevent pasta from sticking

Add the arugula to the bowl (can sub out with baby kale or spinach)

Then the smoked salmon which has been torn or cut into bite size pieces

Drizzle with tangy herbed yoghurt dressing & toss well to combine & serve
