add salt and pasta to boiling water ~ cook according to the package directions

when the pasta is done cooking, reserve 1 cup of the pasta water

drain the pasta ~ don’t rinse it!

melt butter and add chopped onions ~ season with kosher salt and sauté for 3 minutes

add chopped garlic and sauté for 30 seconds

add tomato paste and cook for 1 minute

add crushed tomatoes

add kosher salt and red pepper flakes

simmer for 5 minutes

stir in heavy cream

add grated Parmesan cheese and chopped fresh basil

add the cooked pasta

stir to coat the pasta with the sauce

add some of the reserved pasta water to make the sauce extra silky

sprinkle with more grated Parmesan cheese

add fresh mozzarella
