Creamy Tuscan Tortellini (One Pan Meal)
Heat oil or butter in pan, add pancetta or bacon if using- cook until rendered and crisp

Add shallots, garlic, chili flakes and Italian seasoning and cook until shallots are softened

Deglaze pan with broth then add the sundried tomatoes

Then the cream

Bring to a simmer (not a boil) and stir in the tortellini

Cover and cook for 5 min stirring occasionally

Stir in the spinach and Parmesan cheese if using and cook for another 1-2 minutes until spinach is wilted

And sauce has thickened slightly - serve immediately
