Place sliced potatoes in a pan, cover with water, add salt and cook for 15 minutes.
Place the cashew nuts and water in a food processor.
Whizz until completely smooth.
Drain the potatoes and add the blended cashews and salt + pepper.
Use a fork or potato masher to mash the potatoes until smooth.
