Creamy Vegan Spinach Soup (In A Blender)!

You’ll need: fresh or frozen spinach, red lentils, peeled and diced potato, cashews, bouillon, miso paste, cumin, black pepper, crushed red pepper
Add all the ingredients (except the spinach) to a large pot and bring to a boil. Simmer on low (covered) for 15 minutes.
Carefully transfer the mixture to a high-powered blender and add the spinach. Let it sit for a minute so the steam can escape.
Then, blend on high until smooth and creamy...
...and pour it right into a bowl!
Top with vegan feta and crushed red pepper. Serve with fresh bread. Enjoy!
