Crispy Oven Roasted Potato Wedges

Toss potato wedges and olive oil together in a medium bowl.
Spread onto a baking sheet and season with salt and pepper.
Roast 35-45 minutes, tossing once or twice, until potatoes are crisp and fork tender.
