Spray pot with cooking spray. Add uncooked quinoa, corn, chickpeas, black beans, red pepper, tomato, onion, cumin, garlic, salt/pepper, & adobo sauce
After combining all the ingredients, add in vegetable broth and stir until well combined, then cover the slow cooker
Cook on high for 3-4 hours. My slow cooker made it perfect at 3 hours, you will want to check at that point to make sure the quinoa isn’t burning
Once cooked, season to taste with salt and pepper
Garnish with cheddar cheese and/or cilantro and DEVOUR!
